Cargill launches TexDesign™, its latest innovation for fat-reduced bakery products in Japan
MECHELEN, Belgium — 30 May 2008 — At IFIA 2008 in Tokyo, Cargill launched its latest texturizing proposition specifically targeting a key health concern in Japan known as “metabolic syndrome” (excessive internal fat, high blood pressure and a high blood-sugar level). Weight management is a key way to fight this syndrome, and reduction of fat in the diet is a prudent step in helping reduce overall calorie intake and managing weight.
Fat-reduction bakery breakthrough
Cargill revealed how its breakthrough fat replacement system TexDesign™ replaces up to 50 per cent of fat in a variety of bakery goods - enabling development of delicious fat-reduced products that will delight consumers. Visitors at the Cargill booth had the opportunity to sample consumer products made with the TexDesign™ system, to taste for themselves how impressive the results are.
Major market impact
Bakery products represent one major market segment affected by metabolic syndrome, and so bakery manufacturers in Japan are looking for new solutions and concepts that provide lower fat options for consumers.
The main focus on the Cargill booth was fat-reduced butter cakes, made with the new and innovative TexDesignTM system from Cargill’s texturizing business, which targets the healthier eating market.
The TexDesign™ system is a subtle combination of different types of starch, which not only replaces fat, but also improves emulsification.
Bakery products made with Cargill’s TexDesignTM system achieve the full functional and sensory characteristics of traditionally baked goods. Fat-reduced butter cakes made with
the TexDesign™ system have the light, soft texture of traditionally made cakes – as well as less fat.
The TexDesignTM system is easy to incorporate as a dry mix or cream to replace margarine or oil in a current recipe without the need to modify existing production methods. Additionally, cakes made with the TexDesignTM system typically have a longer shelf life.
