Locust bean gum

Functionality

Locust bean gum is only soluble after heating up to 80 - 90°C, depending on time and mechanical treatment. Used alone, it is a thickener. Viscosity at 1 % ranges from 2000 to 3500 cps.

In the presence of kappa carrageenan and/or xanthan gum, locust bean gum forms a gel. The synergy with kappa carrageenan provides noticeable advantages:

  • Reinforcement of the carrageenan gels
  • Elastic texture
  • Prevention of syneresis.

Properties:

  • Viscosity development after a heating step
  • Creates a pleasant texture with a good flavor release
  • Strong interaction (gelation) with k-carrageenan, agar and xanthan
